I’ll admit that I do not enjoy preparing weeknight family dinners.
Menu planning is a huge struggle for me. I battle a picky eater and have spent the full eight years of his life being a short order cook. Thank God that one of my children is a teenager now and has reached a stage in life where he eats pretty much anything I put in front of him. He gives me hope for my youngest who doesn’t like anything except noodles.
Preparing a well-planned weeknight meal that everyone enjoys is next to impossible around here and sort of a sore subject for me. I’ve tried to get my family to the table time and time again, but my lack of consistency is painfully evident on any given weeknight.
I’ve gone through different stages of picking and choosing this battle, and I guess I have a fresh motivation right now with the start of school and normalcy (whatever that is?) to give it another go. Plus? It’s on my list so I have to try, right? By the way, I haven’t crossed one thing off that list yet and I’m kind of ticked off about it.
One thing at a time, right?
#13: Cook dinner 6 nights a week. A recent review of this list has left me wondering what I was thinking when I wrote it. It’s pretty ambitious.

The first problem I have with cooking dinner is grocery shopping. I notoriously forget my list and my fridge is almost always empty, but with eMeals I don’t have to plan anything.
