Sweet and Spicy Salmon with Brown Rice

Quick dinners are a must around here. Meal planning is not my forte, and I need things to be simple, accessible, and generally found in my pantry when I’m out of most everything else. I’m the queen of throwing something together from nothing. It’s sort of what I do. I’ve gone through the stage of life where I tried to prepare gourmet meals, and be the perfect cook, but that’s not really me. My husband doesn’t care what I cook, as long as I cook. I enjoy cooking and baking, but the quick weeknight meal thing can be a challenge for me. If I’m going to prepare it, it’s got to be quick and simple!

This is a recipe that sort of happened by accident, but it was delicious! It was one of those “well, I don’t have this, but I wonder if that will work?” type dishes, and it worked. It’s easy to throw together and takes little to no prep work. All you need is some frozen salmon from the grocery, a few spices, lemon juice, and a quick and healthy side dish, like Minute® Ready to Serve Rice. If you like spicy, you’ll love this dinner. It took less than 30 minutes to prepare and cook. That’s my kind of dinner!

Mix all the spices together and add lemon juice.

Pour over salmon and bake at 400 for 20 minutes.

Sweet and Spicy Salmon

2 Salmon Filets
3 tbsp brown sugar
1/4 tsp ground red pepper
1/2 tsp cumin
1/2 tsp garlic powder
1 tsp oregano
juice of one lemon juice

Mix all the ingredients in a bowl and rub generously onto salmon. Bake at 400 for 20 minutes. Done. Serve with brown rice and your favorite veggie or salad. So easy!
