Simple and Sweet Spring Salad

I don’t know what I want out of 2013. All this new year talk is too much pressure. I can’t find one word to describe the four million thoughts I’m having, but I can share a recipe with you.

Humor me, OK?

This salad is easy and yummy! Two things a salad has to be in order for me to eat it.

It’s also a favorite of mine to bring to a party or get together. I had it for the first time at a baby shower a few years ago, and have thrown it together at the last minute on more than one occasion since. It’s a crowd pleaser!

What you need:

Spring mix salad blend

Feta Cheese

Dried cranberries

Chopped walnuts

Raspberry vinaigrette dressing

 

Layer the ingredients in the order above over the bed of spring blend lettuce. Be sure to add the feta first because it makes a pretty backdrop for the other ingredients. Drizzle the dressing just before serving. Serve with a fresh baguette and enjoy!

  4. So yum! I make a version of this salad with goat cheese and love it. I’ll try the feta next time. I wrote a new year’s post earlier this week, but also have felt stuck in what I want out of 2013. The one thing that I feel sure about is that I want to make more soup! We must be on a similar wavelength ;-) ! Happy New Year! I trust we’ll both find our way easily and gracefully this year!

  6. OMG I love spring salads. This is one of my favorites but I use goat cheese because we are mostly a dairy free home and goat is tolerated by my very allergic little one.
